As the reigning UK champion of Copa Jerez, executive chef Carlos Martinez is uniquely qualified to judge this year's UK finalists. Last year he competed with his Copa Jerez team member Gino Nardella MS, where they displayed excellent knowledge of how versatile Sherry is with food.
Carlos has worked at 18 Michelin-starred restaurants throughout Europe and masters both classic and modern techniques combined with Mediterranean flavours. After finishing his culinary studies in Toulouse, France, Carlos worked in various restaurants gaining knowledge from the very best chefs. On moving to the UK, Chef Daniel Galmiche invited Carlos to work with him at Cliveden House. During this time he retained Cliveden’s Michelin star award and was one of the ten finalists of the 2012 British Culinary Federation Chef of the Year.
Now, in the heart of London, Carlos, alongside his Head Chef Jozef Rogulski, has developed The Stafford London’s award-winning culinary team and creating exciting new seasonal menus for The Lyttelton restaurant.
