He has been sous-chef at Falsled Kro for six years. Before that, he was a member of the team at the restaurant Bistro de Luxe, where he was chef de cuisine, a post he had held on the yacht D’Angleterre as well as in various hotels in the French Alps and the hotel Hesselet in Denmark.
Sommelier at Sortebro Kro. after four years working as a head waiter, Nicolai Michael Hyllested has been head sommelier at Falsled Kro. Previously he was head waiter at the restaurant Elverdamskroen and sous-chef at Dragsholm Slot.
