Podium onder de Dom is located in a historic building in the city of Utrecht. Under the motto “complexity is simplicity” the “simplicity” of the highest quality fresh produce is all prepared on a daily basis from the bread to the desserts. Wine also plays a very important role in the restaurant, which has some 200 listings with the focus firmly on food matching.
Trained as a chef in Belgium and France, he is the proprietor and head chef of the Restaurant Podium in Utrecht. In 2016 he won the Gault & Millau prize for talent. He creates a pure cuisine based on traditional dishes and universal flavours, using the minimum number of ingredients in order to achieve the maximum complexity and perfection. He is considered a great wine connoisseur, particularly those of Jerez.
For six years Goos van den Berg has held various posts in the kitchen and dining room of Podium onder de Dom. After graduating in social sciences at the University of Utrecht, he joined the Podium team as head sommelier, charged with wine buying and educating the waiting staff. Last year he completed the WSET level 2 and 3 exams and is currently studying oenology at Holland’s wine academy (Wijnacademie).
