The bar at Taberna de Haro is called Straight Law Bar, named after the Savoy Hotel cocktail Straight Law which consists of 2 parts dry sherry and one part gin. We use La Gitana manzanilla and Plymouth gin. Bracing, tangy, and arresting. If you are not a martini drinker, try the Albariza, a dazzling splash of minerals in a glass: manzanilla, Salers, Dolin Blanc, lemon & cava. And, Bar Manager Jonathan Buonomo's Manzanilla Negroni is sultry and satisfying, with Lustau Papirusa manzanilla, Campari, and Perucchi red vermouth.
Pairings: A bottle (375ml) of Manzanilla Orleans Borbón with our Manzanilla Plate, which consists of piquillo pepper, tomato bread with jamón ibérico, anchovy-stuffed olives, boquerones and potato chips.
