My favorite Sherry Cocktail pairing is still the one I presented for last year's Sherry Cocktail Competition in 2014. Chorizo stuffed squid, sofrito, olives, crispy potatoes, chimichurri, paired with 'Penelope" - a cocktail with Gonzalez Byass Leonor Palo Cortado, Brandy de Jerez, brut rosado cava, grenadine, lemon, and cacao.
Ian J. Adams began his career in hospitality while studying jazz trumpet at a University in Los Angeles, California in 2004. Since then, he has worked as a bartender, sommelier, beverage director, manager, and educator in a variety of settings, from nightclubs in Los Angeles to oil baron steakhouses in Texas to 'Celebrity Chef' fine dining restaurants in San Francisco. He has been curating the superb beverage selection at 15 Romolo since 2011, including the rapid expansion of its celebration of Sherry Wines.
