Trockene Sherry-Weine

Die Vinos Generosos sind in der Satzung des Consejo Regulador - des Kontrollrats für Sherry - als trockene Weine definiert (mit einem maximalen Restzuckergehalt von fünf Gramm pro Liter).
Die Erzeugung umfasst die vollständige Vergärung der Moste, die normalerweise aus Palomino-Trauben hergestellt werden. Am Ende der Vergärung bildet sich auf dem Grundwein eine Hefeschicht, die auch Flor genannt wird.

Die Entscheidung des Kellermeisters, den Grundwein entweder auf 15,5 oder auf über 17 % vol. Alkohol aufzuspriten, bestimmt den Ausbau, dem der Wein anschließend unterzogen wird. Daraus entstehen dann die verschiedenen Varianten des Vino Generoso:
