辛口シェリー

ビノ・へネロソは原産地呼称統制員会によって、辛口ワイン(最大残糖分1リットルあたり5グラム)と規定されており、パロミノ種のぶどうのモストを完全発酵した後に、「フロール」と呼ばれる酵母の膜がベースワインの表面に発生します。
 

ワイン生産者がベースワインをアルコール度数15%または17%以上に酒精強化することを決めると、その後のワインの熟成のタイプが確定します。ここから様々なタイプのビノ・へネロソが誕生します。
