The wine pairing Manzanilla Pasada 'Pastrana' from Bodegas Hidalgo-La Gitana with the Langoustine is a very interesting match based on several factors; the vegetal and green character of the Broad Beans, Peas and Mint are perfectly enhanced by the classic notes of chamomile and ripe apple of the unique Sherry and the natural sweetness of the succulent crustaceans and the Langoustine sauce is perfectly balanced by the contrast of the typical salty and savory style of the wine.
