Sesame–crusted salmon with roasted tomato and almond salad

Pair with: Amontillado

Cooking time: 1 hour

Normally a fino would complement this dish, and it will, but as the salad and salmon are quite rich the amontillado worked very well. The extra richness of the sherry cut through the dressing. The toasted sesame seeds and the almonds provide good texture.
