The project, funded by the Cádiz Provincial Council’s Department of Planning, Coordination and Strategic Development, strengthens in-person training within the Sherry Region.
Jerez de la Frontera, April 9, 2026. The Regulatory Council of the Denominations of Origin Jerez-Xérès-Sherry, Manzanilla-Sanlúcar de Barrameda and Vinagre de Jerez today hosted the official presentation of its new Enogastronomic Classroom. This new space has been created with the aim of enhancing education and promoting the versatility of wines from the Sherry Region, reinforcing their key role in international gastronomic culture.
The DipuInnova project for the development and outfitting of the new Enogastronomic Classroom has been made possible thanks to funding from the Cádiz Provincial Council, through its Department of Planning, Coordination and Strategic Development. The space was designed by Belén Rubiales, while construction and technical installation were carried out by Rages Obras y Construcciones, Unic Hostelería and Victoria Cocinas. The new facilities are equipped with state-of-the-art kitchen furnishings and technical equipment, enabling the delivery of high-level sensory and educational experiences.
The event was attended by leading representatives of the institutions involved, who highlighted the strategic importance of this new initiative:
Mr César Saldaña, President of the Regulatory Council, emphasised that this space “has been conceived with the aim of bringing Sherry wines even closer to society, reinforcing their role as both an oenological and cultural heritage, and highlighting their remarkable gastronomic versatility.” He also noted that “the creation of this classroom represents a strategic step in using gastronomy as a key vehicle for communicating the value of our wines.”
Ms Almudena Martínez del Junco, President of the Cádiz Provincial Council, underlined the institution’s firm commitment to promoting the province’s strategic sectors. In this regard, she reaffirmed the Provincial Council’s ongoing support for all initiatives led by the Regulatory Council aimed at fostering wine culture and enhancing the profile of Sherry wines within the province.
Meanwhile, Ms María José García-Pelayo, Mayor of Jerez, highlighted the significance of this milestone for the city, particularly in a year when Jerez holds the title of Spanish Capital of Gastronomy, further strengthening its position as a global benchmark in the world of wine.
During the event, the Council also announced the upcoming launch of its new programme of training activities, set to begin in May. The new Enogastronomic Classroom will expand the range of seminars, workshops and professional gatherings designed for sommeliers, journalists and hospitality professionals. Following the presentation, authorities and attendees were invited on an institutional tour of the new facilities, offering a first-hand look at the space and its innovative technical equipment.
The event concluded with a jerez de honor, accompanied by several pairing stations featuring specially designed bites, showcasing the ability of Sherry Wines and Manzanilla to elevate any culinary proposal, and celebrating the richness that defines this year of gastronomic distinction for Jerez.
