¿Cuánto tiempo llevas trabajando con/para el vino de Jerez y concretamente en esta bodega?

I was practically born there and I am 71 years old.  At 14 I was helping my father and at 16 I started work there.  

¿Qué te impulsó a convertirte en un hacedor de vinos de Jerez?

It is part of my family tradition, it is in the blood and it looks as if my daughters will carry on the tradition.

¿De qué vino estás más orgulloso y por qué?

Fino, Amontillado and Palo Cortado.  Because these are the wines which we have always made by biological ageing.

Fino, Amontillado and Palo Cortado.  These are the wines which have biological ageing and which at the end of the day are the most complex and most typical of our wines.

Fino, Amontillado and Palo Cortado.  These are the wines which have biological ageing and which at the end of the day are the most complex and most typical of our wines.

¿Cuál es tu favorito y por qué?

Every year I discover new pairings which never cease to surprise me.  I love the sea and anything which comes from the sea goes perfectly with Fino (if it is a fresh flavour) or Amontillado (if it has a more complex flavour).

¿Cuál es tu maridaje perfecto con el Jerez?

They are wines which still remain to be discovered, completely different and very versatile.  Wines with great personality.  

El vino de Jerez posee particularidades que lo distinguen de cualquier otro vino…qué hecho crees que lo hace tan interesante?

We are waiting for them to approve biologically aged wines below 15% alcohol which come about naturally since the yeast consumes alcohol, and that way we would be able to save on all the taxes that are nearly drowning us.  The future must be: To get it into our heads that it is a wine of great quality which needs adequate promotion It needs to be profitable It should always accompany haute cuisine

¿Cuáles son tus primeros recuerdos sobre el vino de Jerez?

As long as I can remember.  When they were girls my aunts used to swim at the door of the bodega because the sea came right up to the door.
