How long have you been working in Sherry and for how long have you been working at this Bodega?
Since 2001 and since January 2017 at Garvey.
What made you want to become a Sherry winemaker?
The intention was to maintain, care for and where possible improve a cultural legacy which is unique in the world and of incalculable value. In essence to protect and love our heritage.
What wine are you proudest of and why?
Amontillado, because to get there, first you have to make a good Fino, which is without doubt the wine which requires the most effort.
What is your favourite Sherry and why?
Amontillado, because it is more complete, complex, elegant and balanced.
What is your favorite Sherry wine pairing?
Sopa de puchero (a broth made from various meats and vegetables) and Amontillado.
Sherry is so unique to other wines -- what Sherry fact do you find most interesting?
The singularity of its aromas and flavours along with the concentration it has, and the way it gives expression to the vineyards which make it.
What plans for innovation and development do you have and where do you see the future for Sherry?
At the moment we have a rather innovative recovery plan which will give our wines a future where quality is valued above quantity.
What are your earliest memories of Sherry wines?
I remember going in the kitchen door with my twin brother asking my father for wine at a very early age. He gave us a little sip of Cream.
