The philosophy behind this pairing with Oloroso Antique Fernando de Castilla is a combination of two factors; the Sweetbread which has an amazing texture and is very creamy, adds sweetness and richness to the Veal finding the perfect balance with the Oloroso. In addition the wild Mushrooms and the reduced Oloroso sauce bring caramlised notes which together with the heartiness of the walnut and the truffle matches exactly the bouquet of the hearthy and masculine 20 years old Sherry.

Oloroso with food

The ideal temperature at which to serve an Oloroso is at between 12 and 14ºC. 

This is the most suitable wine to accompany red meat and game. It combines perfectly with meat stews and casseroles; especially gelatinous meat such as bull's tail or cheeks. The perfect match for wild mushrooms and well cured cheeses.
