If it Swims, if it Flies, if it Runs.... ⠀

Sherry is renowned for its versatility and the ability to serve it alongside so many foods from vegetables through to desserts. But if you're looking for a simple way to remember how to pair these delicious wines, there's a saying that can help; if it Swims pair with Fino, if it Flies pair with Amontillado, if it Runs pair with Oloroso.⠀

Manzanilla and Fino combine to provide the perfect companion for shellfish and fish, especially those with a marked salty taste such as anchovies or even raw sashimi.

Amontillado Sherries present similiar features to finos, but with more body and greater structure, which therefore mixes well with slightly richer dishes, such as white meats, from chicken to quail.⠀⠀

Oloroso sherries are full flavoured and structured in the mouth. Powerful, well-rounded and full-bodied, Oloroso is the ideal accompaniment for intense meat flavours such as roast lamb, steak and casseroles. ⠀

But you don't need to be a Masterchef to join in, you can make some of Annie B's dishes in your own kitchen by following the recipes below, but dont forget to pair them with the perfect Sherry Wine!
