The Treasury opens in San Francisco

Just last month, The Treasury opened it's doors to the public for the first time and it is already poised to be a mainstay in the cocktail and Sherry-loving city of San Francisco.  With 30 Sherry wines offered by the glass, from Manzanilla to PX, it is a must-stop Sherry spot next time you're in the city by the bay.  Also on offer are Sherry cocktails, craft beer, hand-crafted cocktails (with many also featuring Sherry, naturally), it's no wonder that Sherry Ambassador Carlos Yturria is behind the beverage program.

Carlos suggests a few knock-out Sherry pairings to enjoy in the beautiful and historic Beaux Arts-style 1912 building. 

  • La Cigarerra Manzanilla paired with the Tsar Nichoulai Caviar Service with brioche, quail egg, chives, and creme fraiche.  The Manzanilla has firm acid and grassy qualities but is gentle enough to pair with something delicate like caviar.
  • El Maestro Sierra Fino served with the Louisana Blue Crab Roll with Pinkie's poppyseed roll, cabbage, and fennel.  This Fino has a bit higher acid than the others offered by the glass and is fresh, nutty, and salty.
  • His favorite combination, however, pairs Amontillado with their Chicken Liver Mousse with house-pickled cauliflower, carrots, and a quince mustardo. Amontillados are high in acid but still has hips, is nutty, and has a creamy and rich nose. These wines offer the right amount of acid and weight to make the creamy texture of the mousse pop.

Open Monday - Wednesday from 3pm - midnight, until 2am Thursday - Friday, and from 5pm - 2am Saturday, they hope to see you at The Treasury soon!
