UK finalist: Ametsa with Arzak Instruction

Ametsa’s approach is rooted in the traditions of ‘New Basque Cuisine’, pairing the earthy flavours and techniques of Spain’s Basque region with modern, surprising twists featuring locally-sourced and organic produce from land and sea.

This creative and inspiring menu has been curated at Amesta with Arzak Instruction at the Halkin Hotel by Sergi Sanz, executive chef and Jose G. Godoy, restaurant manager.

First course: Scallops Leaving the Home

Seared Scallops with Prunes, Lentils and Black Pudding Sauce
Sherry match: Bodegas Tradicion, Fino

Main course: Iberian Pork "Presa" with Embers

Charcoal Grilled "Presa", Jerusalem Artichokes, Mushrooms Cream and Cherries Sauce with Very Old Amontillado
Sherry match: Bodegas Tradicion, Oloroso VORS

Sweet course: Yellow Brick Road

Yellow Road With, Nuts, Pineapple Ice Cream, Avocado Caramel and Moscatel Rock.
Sherry match: Fernando De Castilla, Moscatel Hechizo
