For Sherry Week, we’re serving a tasting glass of Pedro Ximénez with our chocolate tart. Pedro Ximénez is made from grapes dried in the Andalusian sun before pressing, concentrating their sugars and giving the wine its characteristic notes of raisins, figs, dates, coffee and cocoa.
